Fresh Ricotta

Made using an Old World recipe, our mixed milk Fresh Ricotta is light and mild yet takes on a slightly tangier flavor and enhanced depth.  We start with fresh, sweet whey from our soft ripened cheeses to create this winner.  Sheep’s and cow’s milk are then added for an incredible delicious Fresh Ricotta

  

 Serving Suggestions

 

  • Ricotta is great by itself or with fruit.
  • Dress it up with orange zest and truffle honey.
  • Whipped into pancake and waffle batters.
  •  Drizzle with a high-end olive oil and freshly cracked pepper.
  • Folded into cheesecakes, piped into cannolis, stirred into a pasta sauce, dollop on top of a pasta dish, served in a sandwich, and stuffed into ravioli.
  • In a salad, this cheese couldn’t be happier than when it is paired with the earthy sweetness of roasted beets.
  • The sheep ricotta adds more flavor to any dish, while being lower in fat and higher in protein.
